Orzo Salad









Orzo Salad

Another great pasta salad recipe to try. Mint vinaigrette tossed with orzo, green beans, Kalamata olives, and tomato basil flavored feta cheese. Nice pasta salad !

Ingredients -
  • 6 tablespoons Extra Virgin Olive Oil
  • 4 tablespoons Red Wine Vinegar
  • 1 tablespoon chopped Mint
  • 1 tablespoon chopped Oregano
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Pepper
  • 3/4 pound Orzo
  • 1/2 pound Green Beans, cut into 1 inch pieces
  • 1/2 cup Kalamata Olives, chopped
  • 1/2 cup crumbled Tomato Basil Feta Cheese
Preparation:

1. Add extra virgin olive oil, red wine vinegar, mint, oregano, salt and pepper to small bowl.
2. Whisk until well blended.
3. Cook orzo according to package instructions. Add green beans to orzo during last 5 minutes of cooking.
4. Drain orzo and beans in colander.
5. Add orzo and green beans to large serving bowl.
6. Toss pasta with Kalamata olives and dressing.
7. Fold in tomato basil Feta cheese.
8. Serve immediately or chill until ready to use.

Black Bean Pasta Salad








Black Bean Pasta Salad

Try this nice pasta salad recipe of the South border style black bean salad. Consist of Penne or rigatoni pasta mixed with black beans, cheddar cheese, green onion, salsa, onion, avocado, green pepper, and seasoned with salt and pepper.... a nice pasta salad !

Ingredients -
  • 8 ounces Rigatoni or Penne Pasta, cooked, drained and rinsed in cold water
  • 1 (16 ounce) jar Salsa
  • 1 (15 ounce) can Black Beans, rinsed and drained
  • 2 cups (8 ounces) shredded Sharp Cheddar Cheese
  • 1/2 cup chopped Green Pepper
  • 1 small Onion, chopped
  • 1 Fresh Avocado, sliced
  • 1/2 teaspoon Salt
  • 1/8 teaspoon Pepper
Preparation:
1. Add pasta, salsa, black beans, cheddar cheese, green pepper, onion, and avocado to large serving bowl.
2. Season with salt and pepper.
3. Cover and chill 30 minutes before serving.

Salmon Pasta Salad

Salmon Pasta Salad

This great pasta salad recipe consists of Flaked Alaska salmon and fusilli pasta mixed with tomatoes, cucumbers, mozzarella cheese, parsley, and Parmesan cheese. Salad is tossed with Greek style lemon vinaigrette....great taste !

Ingredients -
  • 1 (15 1/2 ounces) can Alaska Salmon
  • 8 ounces Fusilli Pasta, cooked, drained and cooled
  • 1 pint Cherry Tomatoes, cut in half
  • 2 cups sliced Cucumber
  • 1 cup Mozzarella Cheese, cut into thin strips
  • 1/2 cup chopped Parsley
  • 1/4 cup grated Parmesan Cheese
Lemon Dressing:
  • 3/4 cup Olive Oil
  • 1/4 cup Fresh Lemon Juice
  • 2 cloves Garlic, minced
  • 1/2 teaspoon Dill Weed
  • 1/2 teaspoon grated Lemon Peel
  • Black Pepper, to taste
Preparation:

Pasta Salad:
1. Drain salmon and flake with fork.
2. Add salmon, cooked pasta, cherry tomatoes, cucumber, Mozzarella cheese, parsley and Parmesan cheese to large serving bowl.

Lemon Dressing:
1. Add olive oil, fresh lemon juice, garlic, dill weed, lemon peel, and pinch of black pepper to small bowl.
2. Whisk until well blended.

Thai Shrimp Pasta Salad

Thai Shrimp Pasta Salad
This amazing Thai shrimp pasta salad recipe consists of shrimp and roasted peanuts mixed with greens and tossed in a garlic, ginger and fish sauce highlighted dressing. Great tasty salad !

Ingredients :
  • 2 ounces Uncooked Linguine
  • 1/2 cup shredded Carrot
  • 8 ounces Medium Shrimp, cooked and peeled
  • 1 cup thinly sliced Boston Lettuce Leaves
  • 1/4 cup fresh Cilantro Leaves
  • 2 tablespoons chopped Unsalted, Dry-Roasted Peanuts
  • 1/4 cup Fresh Lime Juice
  • 2 tablespoons Fish Sauce
  • 2 tablespoons chopped Fresh Cilantro
  • 1 tablespoon chopped Green Onions
  • 2-1/2 teaspoons Sugar
  • 2 teaspoons Vegetable Oil
  • 1 teaspoon grated peeled Fresh Ginger
  • 2 Garlic Cloves, minced
INSTRUCTIONS:

1. Add pasta to boiling water. Cook 9 minutes. Add shredded carrot. Cook 1 more minute.
2. Drain pasta in colander. Allow pasta to cool.
3. Add pasta with shredded carrot, cooked shrimp, Boston lettuce, fresh cilantro leaves, and dry roasted peanuts to large bowl. Toss to combine.
4. Add limejuice, fish sauce, cilantro, green onions, sugar, vegetable oil, fresh ginger, and garlic cloves to jar. Secure tight fitting lid. Shake to blend dressing.
5. Pour dressing over pasta salad. Toss to coat. The pasta salad recipe is ready to serve. Enjoy !
